Winemaking
Grapes are grown in sandy clay loam soils. Vines are trained with the Cordon de Royat method which guarantee low yield and are further regulated to yield only 1 kg per vine. Produced from handpicked organic grapes, seeing cold maceration for three days. 15% of the wine was aged in used oak barrels for 3 months, with the remainder aged in stainless steel tanks. Unfiltered.
