Sparkling wine has been quite popular in the Bulgaria for long time. Until recently sparkling wine was made dry, off-dry, or sweet, and from various varietals including Mavrud. Most producers today are using Pinot Noir and Chardonnay with the same techniques used in the Champagne region of France.
