Tasting Notes
This single vineyard Pinot Noir is made from carefully selected hand-picked grapes grown on the estate of the winery near Elenovo. Upon opening, the wine shows black cherry, cassis, and strawberry compote, that releases lavender, forest floor, and redwood bark while swirled in the glass. The texture is firmer and more layered than the Heritage Pinot Noir, and is meant to age at least ten or more years.

Winemaking
Single vineyard Pinot Noir made from carefully selected hand-picked grapes grown on the estate of the winery near Elenovo village in south-east Bulgaria. The wine saw cold maceration for 5 days with an 8 day fermentation. The wine was aged for 12 months in small French oak barrels with 225 l capacity (80% new and 20% second use), 12 months in botti (33 hl), and minimum 6 months in the bottle.
